                                         Marinated Ham Swiss Buns 4 Brunch:     1 lb deli ham, shaved * 1 lb swiss cheese cut thinly * 1 stick butter * 1 1/2 TBS dijon mustard * 1 1/2 tsp Worcestershire *  1 1/2 tsp dried,minced onion *  12 pack sweet dinner rolls (king Hawaiian)  ////   melt butter, add W sauce, Dijon, Onion *  Meanwhile cut rolls gently in half, place bottom half of rolls in sprayed non-stick baking dish, cover w/ham & swiss cheese *  place top half of rolls & drizzle butter mix on top of all w/onions distributed evenly *  cover & refrig overnight * BAKE uncovered 350* 15 - 20 min, let cool, separate for serving  SERVES 12 - cut in half for 6 people

After presents are opened / game is played w/ham buns and apple cider brunch devoured / family is dressed and house is cleaned up /  go out and take a virtual reality ride OR GO SNOW TUBING on Mt Charleston and upon return put dinner together all participating!

Special Christmas dinner drink: make the instant spiced hot apple cider ** can add dash of cinnamon or rum or can make it yourself cheaper and tastier

Lime Jello Salad - 
1 sm. pkg. lime Jello
1 cup boiling water
1 sm. 8 oz can pineapple chunks, drain & save juice
2 c. miniature marshmallows (opt)
1 cup cottage cheese
8 oz. pkg. cream cheese
caramelized or candied walnuts for topping (opt.)
1/3 cup Mayonnaise
Dissolve jello in boiling water and add drained pineapple juice - refrigerate 15 min.  Pour in bowl and use hand held mixer to beat frothy, (it will splatter, so cover) add cottage cheese, mayonnaise, and cream cheese beat on low just until mixed and refrigerate with pineapple and hand split 
caramelized walnuts added overnight. Add marshmallows 4topping  ** do THIS DAY BEFORE

                        Christmas MAIN DISH started DAY BEFORE— First, Prepare a large bowl of hot water, place the frozen fish into a resealable plastic bag, and submerge the bag in the hot water for 5 minutes. If the bagged fish starts bobbing around, use a small bowl to weigh it down. Then just pull the fish out of water and check to see if it bends easily. If it does, you're all set to cook. If not, just throw it back in the water for another minute or two. THEN, soak your pieces of thawed fish in a bowl of 16oz water + 2 TBS vinegar + dash of lemon juice overnight to desmell and tenderize  the Salmon.
6 Fillet of Salmon with the skin   (1/2 pound per person)
1/4 cup Lemon juice
1/4 cup melted butter
1/4 cup olive oil
1 TBS worceshire sauce
1 tsp tobasco sauce
3 cloves minced garlic mixture to drizzle & top
1 Lemon to garnish
4 tsp Dijon Mustard & 3 pinches of soft brown sugar
3/4  cup Bread crumbs 
½ cup freshly chopped Parsley or 1/4 cup dried parsley or use cilantro
3 pinches red pepper flakes
1 tsp ground cumin
1 tsp cayenne powder
1 tsp ground coriander
Salt & Pepper to taste
Rinse the fish gently and pat dry on both sides.
In a plate add the bread crumbs , Parsley, Cayenne, cumin, red pepper flakes, coriander,  Salt & pepper and mix well.  Now gently slather the Mustard & brown sugar on the Salmon and then coat it with the bread crumbs ensuring the entire fish is coated well.
Marinate for 15 minutes.
When ready to cook, Place fish into baking dish lined with foil smeared with olive oil.  Drizzle with 1/2 melted butter & lemon juice mixture - cooked together when melting butter  **  Bake at 400 degrees for 35 minutes or until fish flakes when probed with a fork. top with 1/2 melted butter & lemon juice mixture simmered.  Garnish with lemon wedges. Serve immediately.   Serves 6
Salmon Salsa:   
3 large ripe avocados -  put in paper bag/box until ready, if not soft - Prick the exterior skin of the avocado with a fork at least a dozen times over the entire surface. Make sure to break through the tough skin so that air can reach the interior fruit.  Place the avocado in the microwave and cook for 30 seconds on a medium- or low-heat setting. Remove the avocado from the microwave and give it a gentle squeeze. If the avocado is still hard, microwave for an additional 30 seconds. Check the fruit again; if the skin yields easily with a gentle squeeze, it’s ready. If it’s still too hard, continue microwaving in 30 second intervals until it’s soft enough to peel and chop.  Meanwhile, place in icy cold water - cut up remaining . . .
2 cups cherry tomatoes
¾ cup cilantro
¾ cup green onion
2 tbs veg oil
2 tbs lime juice
2 jalepenos chopped
2 clove garlic
½ tsp salt

or do Salmon broiler meal:  Ingredients
1 salmon filet – serves 4 ppl
½ cup soy sauce
¼ cup honey
¼ cup orange juice
4 cloves minced garlic
1 teaspoon ground ginger
¼ teaspoon red pepper flakes
Instructions: 
Remove any bones from the filet and place into a shallow dish or gallon sized resealable plastic bag.
In a small bowl, whisk together soy sauce, honey, orange juice, garlic, ginger, and pepper flakes. Pour over salmon. Refrigerate and let marinate 30 minutes.

*** Cook your salmon in broiler.  Line a baking sheet with aluminum foil. Place salmon filet in the center and loosely wrap aluminum foil around to trap steam. broil  for 15 to 20 minutes, or until the salmon flakes easily with a fork.

Salmon fried meal: 
1 salmon filet – serves 4 ppl
Bring the salmon to room temperature 10 minutes before cooking. 
Warm a large nonstick skillet with oil over medium-low heat.  Raise the heat to medium-high. Place the salmon, skin-side up in the pan & coat with above ingredients. Cook until golden brown on 1 side, about 4 minutes.
Turn the fish over  with a spatula & coat with above ingredients, and cook until it feels firm to the touch and the skin is crisp if desired, about 3 minutes more. 
The skin can be served or removed easily with a knife or spoon. 

Transfer to a plate and serve as desired.


Smoked Salmon Broiled or grilled - serves 12
1 pint lemon juice
1 1/2 cups parsley (chopped)
3/4 cup onions (finely chopped)
2 Tbsp. granulated sugar
2 tsp. ground black pepper
6 garlic cloves (crushed)
12 6 oz. salmon steaks
lemon wedges (optional)
1/4 cup Hickory Liquid Smoke

In a non-metal container, combine lemon juice, parsley, onions, hickory seasoning, sugar, pepper and garlic. Add salmon steaks, turning to coat both sides. Cover; refrigerate for 1/2 hour, turning once. Drain. Grill or broil salmon, 4 to 6 inches from heat source, for 5 to 7 minutes on each side or until fish flakes when tested with a fork. To serve, per order; place 1 salmon steak on serving plate. Serve immediately with lemon wedges, if desired.


 VEG SIDE DISH:  Broccoli and Garlic (on plate encircle the salmon with the broccoli)
1 head fresh broccoli, cut into florets
1/4 cup butter, melted
2 tablespoons lemon juice
1 teaspoon lemon zest = 2 TBS lemon juice
1 tsp dried red pepper
4 garlic cloves
Here's the basics of steaming broccoli in steamer (or any vegetable, really) in the microwave.
1.   Cut up the broccoli into bite-size florets. - If you want to eat the stalks make sure to cut them smaller than bite-sized and remove any really woody bits so everything cooks evenly.
2.      Put all the broccoli in microwave-safe bowl and add water - For one pound of broccoli (about one head) add 2-3 tablespoons of water.
3.      Cover tightly- close the vents.  Try at 2 1/2 minutes first, then check, re-cover and put back in if it's not done yet.  May need to Microwave on HIGH (regular power) for 3-4 minutes.
4.   Remove lid carefully! Take the lid off so it stops steaming but be careful; the steam is hot and can burn you badly if you're not careful. 
5.   In a small saucepan, melt butter over medium low heat. Remove from heat. Stir in lemon juice and lemon zest.  Pour over hot broccoli top with the almonds, and serve.

After supper (maybe invite siblings, aunts, cousins etc for after dinner fun & play white elephant game - have them wait for a call when you're ready) after enjoy the family with chess 3d game and chess party competition or play "Go Motion" charades  OR  play this game or these or  this one  after game snack:  Micro Spicy Potato Veggie --  ***  serves 8 **  5 lbs yukon , gold or russet potatoes * 1 stick butter or margarine *  salt & pepper & dill weed to taste //  peel then cut potatoes into bite sized pieces, add bit of water * place cut up butter pieces throughout/ nuke on high 10 minutes * add dill, salt pepper -  spoon/soak/cover potatoes in the butter & mix well * nuke on high 6-10 minutes more  --  serve apple cider to drink

--  Optional after dinner treats:  Grandma old fashioned Biscuits - 1 can (16.3 oz) Pillsbury flaky layers biscuits (8) * 4 TBS butter * 2 cloves garlic * 1 TBS Italian seasoning * Parm cheese ***PREHEAT oven 375* --- skillet w/butter, garlic crushed, Ital seasoning, some cheese, CUT BISCUITS into quarters and coat w/skillet mix - TOP W/CHEESE --  BAKE 15/18 minutes
