1 cup cherry tomatoes, halved
1 green onion, sliced

Sausage Meal**
8 lean
sweet Italian sausages

medium all-purpose potatoes
1
large green apple

tbsp. vegetable oil
8 c.
shredded green cabbage
1 large
onion
2
clove garlic
1/2
tsp. Salt
1/4
tsp. pepper

tbsp. all-purpose flour
1 c.
chicken broth
3/4 c.
apple juice or apple cider vinegar
1
tbsp. balsamic vinegar
2
tbsp. chopped parsley
Heat
oven to 425 degrees. Prick 6 sausages with fork. Brown in 12-inch nonstick
skillet over medium-high heat; do not cook through. Set aside. Remove remaining
two sausages from casing and cook, breaking them into pieces, until they lose
their pink color, about 2 minutes; remove and set aside.
Remove
all but 1 tablespoon fat from skillet. Add potatoes and cook 10 minutes.
Meanwhile, cut apple into quarters, core, and peel; cut each quarter into
slices. Remove potatoes and add oil to skillet. Cook cabbage, onion, apple,
garlic, salt, and pepper, stirring occasionally, until cabbage is wilted, 5 to
7 minutes. Sprinkle with flour and stir. Combine broth, apple juice, and
vinegar and stir into pan; remove from heat. Toss in potatoes and crumbled
sausage.
Spoon
mixture into lightly greased 13-inch x 9-inch baking dish. Arrange sausages
over mixture. Cover and bake 25 minutes. Remove cover and bake 15 minutes.
Sprinkle with parsley.

Sausage, Artichoke and Broccoli Casserole --->
Ingredients:
– 12 oz fresh Italian bread, cut bread into 1/2-inch cubes
– 4 cups fresh broccoli, cut into florets
– 1 can artichoke hearts, drained
– 1 large red onion, cut into thin wedges
– 9 oz raw turkey or chicken Italian style sausage, casings removed
– 1/2 cup fat free chicken broth
– 1 tsp olive oil
– 3 garlic cloves, minced
– ½ tsp crushed red pepper flakes
– 1 tsp dried oregano
– ¾ cup low-fat shredded cheddar cheese
– salt and pepper to taste
– non fat cooking spray
Directions:
Preheat oven to 400ºF. Place bread on a baking sheet and lightly coat with non fat cooking spray. Bake about 15 minutes, or until bread is lightly browned. Take out of oven and reduce oven temperature to 350ºF.
While bread is baking, spray a large skillet with non fat cooking spray, and sauté garlic, broccoli and onion wedges until veggies are tender. When they are ready, turn off heat and set aside
In another large, nonstick skillet, heat olive oil over medium-high heat. Brown sausage, breaking it up as it cooks, approx 7 to 10 minutes. Stir in artichokes, broccoli and onion, bread cubes, broth, oregano, salt, pepper and red pepper flakes.
Coat a 9-inch square baking dish with non fat cooking spray. Spoon 3 cups broccoli and sausage mixture into prepared dish and cover with just 1/4 cup of the cheese. Top with remaining broccoli and sausage mixture and then cover with remaining cheese. Bake until cheese is melted and casserole is heated through, about 30 minutes. Cut into 8 equally sized portions. Entire recipe makes 8 servings
Microwave Cooked Orange Beets Veggie
Ingredients
Fresh beets/Canned beets - 1 no

1 Pound, sliced, drained + 1/2 cup can liquid
|
|
Brown sugar
|
2 Tablespoon
|
|
Corn starch
|
1 Tablespoon
|
|
Orange juice
|
1⁄2 Cup (8 tbs)
|
|
Orange peel
|
1⁄2 Teaspoon, grated
|
|
Pepper
|
1 Dash
|
|
Mandarin orange
|
1 Can (10 oz) oranges, segmented, drained
|
Directions
MAKING
1) Slice the beet into 1/4-inch thick slices.
2) To the reserved beet juice add in
enough water to make 1/2 cup of liquid.
3) Into a 1 1/2-quart casserole, add in brown
sugar and cornstarch. Mix well before adding in the orange juice, orange
peel, 1/2 cup liquid and pepper.
4) Microwave the mixture on HIGH for about 4
minutes till it becomes thick. Mix twice in between the cooking time.
5) Add in the beets.
6) Microwave for 2 1/2 minutes on HIGH. Stir once.
7) Carefully, add in the segmented oranges. Mix
gently.

Bread ** Ingredients
3-1/2 cups Grated Cheddar Cheese
3/4 cups Monterey Jack Cheese, Grated
1/2 cup Grated Parmesan Cheese
1/2 cup (Real) Mayonnaise
4 whole Green Onions, White And Light Green Parts
Minced
1 dash Salt
1 loaf Crusty French Bread
1 stick Butter
4 cloves Garlic, Finely Minced
Directions
Mix cheeses with the mayonnaise and the green
onions. Add dash of salt to taste and set aside or keep in fridge until you
need it.
Cut loaf of bread in half, then each half into half again. Working 1/4 loaf at a time, melt 2 tablespoons butter in a skillet and add 1/4 of the minced garlic. Place 1 of the 1/4 loaves face down in the skillet, swirling it to soak up the butter and garlic. Allow bread to toast in the skillet, removing garlic if it starts to get too brown.
Repeat with remaining butter, garlic, and bread.
Spread cheese mixture on warm loaves and bake in a 425 degree oven until cheese is hot and bubbly, about 10 minutes.
Slice and serve.

dissolved—add 1/2 of pie filling and whipped topping—spoon into crust
ADD 1/2 of pie filling and top w/ 3/4 cup pecans
