2 cups peach nectar * 5 ripe peaches, peeled, sliced * juice of 4 limes * 4 cups ice cubes * 4 peaches sliced, garnish BLEND until well mixed pour into martini glasses, add garnish ** can substitute 2 15.5 oz canned peaches for fresh peaches or frozen peaches ** can substitute 1/2 cup limeade for lime juice Serves 4

Fruit Salad—1 large box (6 oz) lemon jello ** 1 can lemon-lime soda ** 1 can (20 oz) crushed pineapple, drain with juice reserved ** 1 can (15 oz) mandarin oranges **2 cups halved green grapes ** 1 egg ** 1/2 sugar ** 2 TBS flour ** 1 TBS butter ** 1 cup heavy whipping cream ///// after 1 hour add pineapple, oranges and grapes, then later WHEN FIRM, add topping: bring to boil egg, sugar, flour, and pineapple juice, cook until thick, let cool then fold in whipped cream -mix well and spread
Peppers! 6 large green peppers * 2 eggs,* 1 large onion chopped * 3/4 cup seasoned breadcrumbs * 2 TBS garlic powder * 1 1/2 TBS each: basil, oregano, thyme * 2 tsp onion powder * 1/2 tsp salt * 1/4 tsp pepper * 2 lbs ground beef * 1 TBS olive oil * 1 1/4 cup Marinara Sauce
CUT PEPPER tops off & discard seeds/pulp * set aside in salted water, drain upside down
Saute Hamburger with onion/garlic,drain * add dry mixture, add 1 cup marinara sauce with egg last/MIX * spoon in peppers * cook covered 12 min/top with 1/4 cup marinara—cook 1 min—Nuked on HIGH

1 lb. fresh bulk Italian sausage
5 cloves garlic, chopped
1 can (14.5 oz.) diced fire-roasted tomatoes
1 cup grated Monterey jack
4 poblano chiles, halved lengthwise and seeded
4 tbsp. olive oil
1/2 lb. plum tomatoes, chopped
1 yellow bell pepper, seeded and chopped
1/4 red onion, chopped
1/3 cup chopped cilantro
2 tbsp. red wine vinegar
1/2 cup sour cream
1. Preheat a grill or grill pan over medium-high. In a
skillet, cook the sausage over medium, stirring occasionally and breaking up
with a wooden spoon, until browned, about 8 minutes. Stir in the garlic and
transfer to a large bowl to cool. Stir in the fire-roasted tomatoes and cheese;
season with salt and pepper.
2. Brush the outsides of the halved poblanos with 1 tbsp.
oil; season all over. Spoon the sausage mixture into the poblano halves and
transfer to the grill or broiler. grill/broil until the poblanos are tender and the
filling is warm.
3. Meanwhile, in a medium bowl, toss the plum tomatoes, bell
pepper, red onion, cilantro, vinegar and the remaining 3 tbsp. oil; season the
salsa. Top the poblanos with the sour cream and salsa.
Chocolate Cheesecake DESERT—
Base: 1 1/2 cups (15) crushed oreos—make rough crumbs **
1/2 stick butter
FILLING: 6 oz dark chocolate chopped small ** 3 8oz pkg of cream cheese * 3/4 cup sugar *
TOPPING: 10—15 broken oreos
BASE: 9” pan oreos/butter dampness super crushed—put in freezer FILLING: melt chocolate/set aside, BEAT cream cheese, add sugar, cocoa powder, add chocolate from freezer, add whipped cream, then oreos—pour in pan from freezer TOP w/ broken Oreos

EASTER is always celebrated on Sunday, following 1st full moon, after the Spring or Vernal Equinox (between 3/22– 4/25)
****Day of **** Easter Worship Service, then do Roller Coaster Rides: Circus Circus—New York New York—Stratosphere—Or Desperado in Primm then eat this special meal!!!
