Da Bomb Peach Smoothie
1 cup sliced
frozen peaches - barely thawed
6 oz. light
peach yogurt
2/3 cup milk I
use skim or fat free
In a blender, add all the ingredients and process
until smooth. Pour into a chilled glass and serve immediately.
Hot n Sour Soup INGREDIENTS 6 servings
3 tablespoons
rice vinegar
2 tablespoons
cornstarch
6 cups reduced
sodium chicken broth
2 tablespoons
reduced sodium soy sauce
3 cloves
garlic, minced
1 tablespoon
freshly grated ginger
1 teaspoon
Sriracha, optional
6 ounces
shiitake mushrooms, thinly sliced
2 large eggs,
lightly beaten
1 can navy
beans
1 teaspoon
sesame oil
2 green
onions, thinly sliced
In a small bowl, whisk together vinegar and cornstarch;
set aside.
Combine navy
beans, chicken broth, soy sauce, garlic, ginger and Sriracha in a sauce
pan over medium heat. Bring to a boil. reduce
heat and simmer until tender about 30 min add mushrooms & simmer another 6 –
8 min
Stir in
vinegar mixture and sesame oil until thickened, about 1-2 minutes.
Gradually add
the eggs in a slow steady stream, stirring with a fork. Cook until the eggs are
set, stirring frequently to create ribbons, about 2 minutes.
Serve
immediately, garnished with green onions, if desired.

the Soy Shrimp Appetizer – 4 servings
1 lb jumbo
shrimp peeled, tail on (about 10 to 12 shrimp)
1/3 cup low
sodium soy sauce
2 tbsp honey
3 cloves garlic
minced
1 tsp ginger minced
1 tsp sriracha
sauce
2 tbsp fresh
parsley chopped
In a medium size bowl, whisk together the soy sauce, honey,
garlic, ginger and sriracha sauce.
Add the shrimp
to the bowl and toss well making sure the shrimp is coated in the sauce.
Refrigerate and let marinate for 20 minutes.
Heat a skillet
over medium high heat and add the shrimp to the skillet, reserve leftover
sauce. Cook on both sides about 2 to 3 minutes per side until shrimp starts to
turn pink and is cooked. Garnish shrimp with fresh parsley. Remove shrimp from
skillet and set aside.
Pour remaining
sauce in the skillet and cook for a couple minutes until sauce reduces and
thickens. Use the sauce to dip the shrimp in.
Spicy Filipino Pork Adobo/
Crock Pot** SERVES 10, in a bowl!
wash 4 lbs pork butt meat with
cold water/pat very dry/cut off fat/rub salt,pepper all over it/place in frying
pan/brown all sides
---Add to
crock pot: pork, 2 large onions, 1 cup
ginger ale/chicken broth or 7-up, cook 4 hours on low
---shred meat,
cut in 2” length, discard all fat—bones– etc/drain-keep onions (keep juice & onions)
---return
shredded pork to crock pot & cook 4 more hours on low, with onions & juice: 4 garlic cloves, sliced
* 1 bay leaf * 1/4 cup red wine vinegar (or rice vinegar) * 2 tsp salt * 1/2 tsp pepper to taste * 4 TBS soy sauce * 1 TBS
brown sugar – taste, may want to add more brown sugar (keep juice to run over noodles)
OR Do Teriyaki Japanese Sauce: 8 TBS soy sauce * 8 TBS apple cider * 4 TBS
brown sugar * ¼ tsp pepper flakes (pizza) * thicken it up w/4 tsp cornstarch
and 4 TBS water –
next day: ** COOK 1 hour on low to warm up and meld
flavors and serve over egg noodles — 2 oz per person ****if warming
up another day - use steam
Egg Noodles/ serves 4 **
Bring 1 1 /2 cups water, 2 boullion cubes and 1/2 stick of butter to
boil using med to high heat.
Add egg
noodles.
Cook until
noodles are desired texture.
(About 6-8
minutes) During last minute of cooking add remaining 1/2 stick of butter.
(You may add
additional butter if desired. Also you may use 1 can of chicken broth instead
of bullion. I suggest using bullion). Drain/pour juice from pork over so doesn't stick
